### Red Velvet Cake

#### Ingredients:

- **Cake:**

  - 2 ½ cups all-purpose flour

  - 1 ½ cups sugar

  - 1 teaspoon baking soda

  - 1 teaspoon salt

  - 1 teaspoon cocoa powder

  - 1 ½ cups vegetable oil

  - 1 cup buttermilk, at room temperature

  - 2 large eggs, at room temperature

  - 2 tablespoons red food coloring

  - 1 teaspoon vanilla extract

  - 1 teaspoon white vinegar

- **Frosting:**

  - 1 pound (2 packages) cream cheese, softened

  - 2 sticks butter, softened

  - 1 teaspoon vanilla extract

  - 4 cups sifted confectioners' sugar

#### Instructions:

1. **Preheat oven** to 350°F (175°C). Grease and flour two 9-inch round cake pans.

2. **Mix dry ingredients:**

   - In a medium bowl, sift together the flour, sugar, baking soda, salt, and cocoa powder.

3. **Mix wet ingredients:**

   - In a large bowl, whisk together the oil, buttermilk, eggs, food coloring, vanilla, and vinegar.

4. **Combine wet and dry ingredients:**

   - Gradually add the dry ingredients to the wet ingredients and mix until smooth and well combined.

5. **Bake:**

   - Divide the batter evenly between the prepared pans. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean. Let the cakes cool in the pans for about 10 minutes, then remove from the pans and cool completely on wire racks.

6. **Make frosting:**

   - In a large bowl, beat the cream cheese and butter together until smooth. Add the vanilla extract and beat until combined. Gradually add the confectioners' sugar, beating until light and fluffy.

7. **Assemble the cake:**

   - Place one cake layer on a serving platter. Spread a layer of frosting on top. Place the second cake layer on top and frost the top and sides of the cake. Decorate as desired.

### Customization Ideas:

- **Flavor Variations:**

  - Add 1-2 teaspoons of instant coffee granules to the dry ingredients for a mocha red velvet cake.

  - Substitute half of the buttermilk with brewed, cooled coffee for a richer flavor.

  - Add a teaspoon of cinnamon or a hint of nutmeg for a spiced version.

- **Frosting Variations:**

  - Mix in different flavors to the frosting such as almond extract, lemon zest, or a few tablespoons of cocoa powder for a chocolate cream cheese frosting.

  - Add crushed freeze-dried raspberries for a fruity twist.

- **Filling Options:**

  - Spread a layer of raspberry jam or chocolate ganache between the cake layers.

  - Add fresh berries or sliced strawberries between layers for a fresh, fruity flavor.

- **Decorations:**

  - Sprinkle the top with crushed nuts, shredded coconut, or white chocolate shavings.

  - Use food coloring to create an ombre effect with the frosting.
